Austin’s best pizza trailer is taking root. Or building walls, I guess. Sammataro, which started as a pizzeria and later turned into a Lost Creek trailer that eventually moved to East Austin, took over the former 40 North space at 900 W. 10th St. near Lamar Boulevard. The restaurant is due to open on January 20th.
Sammataro co-founder Isaac Flores started the business as a pop-up business in East Austin in the fall of 2020, drawing inspiration from two of his favorite New York locations: Lucali in Brooklyn and Scarr’s Pizza in the East Village.

Flores puts his dough to cold fermentation for 48-72 hours. He then bakes 16-inch pizzas in a low-dome wood-burning oven, living out his dream of a fantastic pizza with puffy and burnt edges with a crispy base that gives just the right amount of wiggle and tension. Fillings from high quality ingredients complement expensive pies. The menu of the new Sammataro will also feature meatballs, salads, fresh mozzarella and more.

This isn’t the only good pizza news floating around in Austin. Townsend Smith, one of Flores’ partners at Sammataro and the chef Flores says taught him how to make the perfect dough, is opening two Allday Pizza restaurants at Flo’s upcoming Wine Bar & Bottle Shop on the northern edge of Tarrytown. and at the Day Dreamer bar in East Austin later this year.
Other recent additions to the city’s pizzeria include Dovetail pizza from owners Salt & Time and Lenoir; and the owners of L’Oca d’Oro plan to open a pizzeria in East Austin later this year.
